5-Minute Asparagus

Ingredients:

* 1 lb asparagus
* 3 TBS low-sodium chicken or vegetable broth

Mediterranean Dressing:
* 3 TBS extra virgin olive oil
* 2 medium cloves garlic
* 2 tsp lemon juice
* sea salt and pepper to taste

Greek Garbanzo Bean Salad

Use canned garbanzo beans to make this an easy-to-prepare tasty Meditlerranean-style salad in a matter of minutes.

Prep and Cook Time: 10 minutes

Ingredients:

  • 1 15 oz can garbanzo beans, preferably organic
  • 2 cloves garlic
  • sea salt and pepper to taste
  • 2/3 cup minced green onion
  • 1 medium tomato, diced
  • 3 TBS parsley, minced
  • 2 TBS extra virgin olive oil
  • 1 TBS fresh lemon juice
  • Optional: 1/4 cup feta cheese
  • 1 head romaine lettuce

Directions:
  1. Press or mince garlic and let sit for at least 5 minutes to bring out its hidden health benefits.
  2. Drain liquid from garbanzo beans and rinse under cold running water; this helps prevent intestinal gas.
  3. Mince green onions.
  4. Dice tomatoes.
  5. Mince parsley
  6. Combine all ingredients and serve over a bed of romaine lettuce.
  7. Top with feta cheese, if desired.

Body Trim Diet Lunch Recipe for Today

Healthy Caesar Salad

You can add or substitute any of the vegetables your personal favorites or use what you have on hand. This is a healthy version of a Caesar salad that is only limited by your imagination.

Prep and Cook Time: 15 minutes

Ingredients:

  • 4 cups chopped mixed greens (spinach, romaine, arugula)
  • 4 oz chicken or turkey slices
  • 4 oz grated low-fat cheese (cheddar, goat cheese or blue cheese)
  • 1/4 cup cucumbers
  • 1/4 cup tomatoes
  • 1/4 cup bell peppers
  • 1/4 cup celery
  • 3 TBS walnuts

Directions:

Combine all ingredients and top with your favorite vinaigrette dressing. Seves 1

Yummy & Quick Broiled Chicken Breast with Honey Mustard Sauce

Quick Broiled Chicken Breast with Honey Mustard Sauce Recipe

This special honey-mustard sauce enhances the flavor of the chicken breast, while serving it with spinach adds even more nutrition to this great-tasting recipe. Enjoy!

Prep and Cook Time: 30 minutes

Ingredients:

  • 4 boneless, chicken breasts with skin
  • 2+1 TBS fresh lemon juice
  • 1 ½ cups chicken broth
  • 2 ½ TBS honey
  • 2 TBS Dijon mustard
  • ¼ cup sliced dried apricots
  • 2 TBS coarsely chopped walnuts
  • 1 TBS chopped parsley
  • salt and pepper to taste

Directions:

Quick Broiled Chicken

  1. Preheat the broiler on high and place an all stainless steel skillet (be sure the handle is also stainless steel) or cast iron pan about 6 inches from the heat for about 10 minutes to get it very hot.
  2. While the pan is heating, rinse and pat the chicken dry and season with 2TBS lemon juice, salt and pepper.
  3. Leaving the skin on, place the breast (skin side up) on the hot pan. It is not necessary to turn the breast because it is cooking on both sides at once. Depending on the size, it should be cooked in about 7 minutes. Begin preparing the sauce.
  4. The breast is done when it is moist, yet its liquid runs clear when pierced. The inside temperature needs to reach 165 degrees farenheit or 74 degrees celcius. Remove the skin before serving; it is left on to keep it moist while broiling.

Honey-Mustard Sauce

  1. For honey-mustard sauce, combine broth, 1TBS lemon juice, honey, and mustard in a small saucepan. Whisk together and bring to a boil on high heat. Once it comes to a boil, simmer for about 20 minutes. You want it to be reduced to a little less than half the volume you start with. This will thicken and intensify the flavor.
  2. Add apricots and cook on high for another 5 minutes. When sauce is done add chopped walnuts, parsley, salt and pepper.

    Serve over cooked spinach or other cooked greens. Serves 4
